{"id":120,"date":"2012-10-27T07:08:24","date_gmt":"2012-10-27T07:08:24","guid":{"rendered":"http:\/\/52sundaydinners.com\/recipes\/?p=120"},"modified":"2012-11-07T22:07:07","modified_gmt":"2012-11-07T22:07:07","slug":"ultimate-fish-tacos","status":"publish","type":"post","link":"http:\/\/52sundaydinners.com\/recipes\/ultimate-fish-tacos\/","title":{"rendered":"Ultimate Fish Tacos"},"content":{"rendered":"<p><a rel=\"attachment wp-att-121\" href=\"http:\/\/52sundaydinners.com\/recipes\/ultimate-fish-tacos\/img_3457\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-121\" title=\"IMG_3457\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3457-600x450.jpg\" alt=\"\" width=\"600\" height=\"450\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3457-600x450.jpg 600w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3457-300x225.jpg 300w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3457.jpg 1600w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>I remember the first time I heard about Fish Tacos.\u00a0 I thought the mixture of seafood and Mexican cuisine was a joke.\u00a0 Well, I soon learned to love that balance of Southwestern flavors such as Cilantro, Avocado, Lime and Salsa with the richness of freshly fried fish.\u00a0 This is a &#8220;joke&#8221; I can&#8217;t get enough of.<\/p>\n<h2><a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3453.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-364\" title=\"IMG_3450\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3450-580x435.jpg\" alt=\"\" width=\"580\" height=\"435\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3450-580x435.jpg 580w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3450-300x225.jpg 300w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3450.jpg 1600w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a>Ingredients<\/h2>\n<ul>\n<li>5 &#8211; Medium Catfish Fillets<\/li>\n<li>2 &#8211; Large Eggs<\/li>\n<li>1 &#8211; Cup Seasoned Fish-Fry mixture such as Zatarain&#8217;s<\/li>\n<li>Vegetable Oil for Frying<\/li>\n<li>2 &#8211; Avacodos<\/li>\n<li>1 Cup &#8211; Cilantro Leaves<\/li>\n<li>1 Cup &#8211; Mild Cheddar Cheese, Grated<\/li>\n<li>1 Cup &#8211;\u00a0 Salsa<\/li>\n<li>1 Cup &#8211; Chopped Tomatoes<\/li>\n<li>1 &#8211; Yellow, Red or Orange Bell Pepper, thin sliced<\/li>\n<li>1 Cup &#8211; Pickled Jalapeno Pepper Slices<\/li>\n<li>1 Cup &#8211; Sour Cream<\/li>\n<li>2 &#8211; Limes cut in 1\/8s<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Cut the 5 Catfish Fillets into 20 smaller fillets.\u00a0 Each whole fillet will make 4 pie-shaped fillets.<\/li>\n<li>Prepare for stovetop frying with 1\/2 inch of vegetable oil in pan.\u00a0 Heat to 350 degrees.\u00a0 NOTE: Take extra safety precautions to maintain the proper oil temperature.<\/li>\n<li>As you heat the oil, set-up a dredging station of\u00a0 lightly beaten eggs in one container and Fish-Fry mixture in another.\u00a0 Dredge the mini fillets through the egg and then the seasoned fish-fry mix, and into the oil.<\/li>\n<li>Cook in batches small enough to maintain the oil temperature.\u00a0 Cook until the fish turn a rich medium brown as shown in the photo.\u00a0 Remove to drain on paper towels or a wire drain rack.\u00a0 Repeat until all the fish is cooked.\u00a0 [No sampling]<\/li>\n<li>There are thousands of ingredient combinations, so dinner at our house is a <strong><em>&#8220;Build Your Own Fish Taco Fiesta.&#8221; <\/em><\/strong>Simply place the Flour Tortillas in a heating bin on the table, put the remaining ingredients in bowls.\u00a0 This includes: Avacodos, Cilantro, Mild Cheddar Cheese, Salsa, Chopped Tomatoes, Bell Pepper Slices, Jalapeno Peppers, Sour Cream.\u00a0 Then just let the passing and buildin&#8217; begin.<\/li>\n<\/ol>\n<h2>Substitutions<\/h2>\n<ol>\n<li>You may use Tilapia instead of Catfish.<\/li>\n<li>Traditionalist use thinly shaved cabbage rather than lettuce.\u00a0 Our family prefers lettuce.<\/li>\n<li>You may substitute Fresh Jalapeno Peppers for the Pickled Peppers.\u00a0 Be sure to remove the seeds, slice thin and remember your hands are covered in the juice from the Jalapeno Peppers.\u00a0 Steer clear of your eyes.<\/li>\n<\/ol>\n<h2>Sides<\/h2>\n<p>Serve with traditional Tex-Mex favorites such as Spanish Rice, Corn Chips and Charro Beans.<\/p>\n<p>Note: Man!
