We are about to dine on Christmas Dinner.\u00a0 Notice the rare snow on the ground in Greenville, Mississippi!<\/p>\n<p>Nana&#8217;s Chicken Parmigiana was always served with a generous sprinkling of\u00a0 fresh lemon juice, as you would do for fish.<\/p>\n<p>When I cook pasta dishes, I usually make half with marinara sauce and half with just butter and seasoning and Parmigiana cheese.\u00a0 Most of the &#8220;third-gen&#8221; like the butter version, as in the photo.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>5 Pounds &#8211; Fresh (not ever frozen)\u00a0 Skinless, Boneless Chicken Breasts<\/li>\n<li>5 Each &#8211;\u00a0 Large Eggs<\/li>\n<li>1.5 Cups &#8211; All Purpose Flour<\/li>\n<li>2 Cups &#8211; Italian Breadcrumbs<\/li>\n<li>2 Teaspoon &#8211; Salt<\/li>\n<li>2 Tablespoons &#8211;\u00a0 Italian Seasoning &#8211; such as <a href=\"http:\/\/52sundaydinners.com\/recipes\/sicilian-blend-italian-seasoning\/\" target=\"_blank\">THIS ONE<\/a><\/li>\n<li>Vegetable Oil<\/li>\n<li>1 Each &#8211; Lemon<\/li>\n<li>1 Each &#8211; Large zip-lock bag, 1 Gallon Size<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Cut chicken breasts into 1\/2&#8243; thick &#8220;mini-steaks&#8221;.<\/li>\n<li>Mix eggs in mixing bowl in preparation for dipping.<\/li>\n<li>Coat chicken breast slices in egg mixture<\/li>\n<li>Combine dry ingredients (flour, Italian breadcrumbs, salt and Italian Seasoning) in the zip-lock bag.<\/li>\n<li>Place about a dozen chicken pieces at a time in the bag and S-H-A-K-E!<\/li>\n<li>Prepare skillet with between 1\/8&#8243; and 1\/4&#8243; of vegetable oil.\u00a0 Heat to medium-high and begin to fry.\u00a0 When skillet is empty, add small quantities of oil to replenish the oil.
