{"id":1341,"date":"2012-05-11T19:18:27","date_gmt":"2012-05-11T19:18:27","guid":{"rendered":"http:\/\/52sundaydinners.com\/recipes\/?p=1341"},"modified":"2012-06-16T02:40:00","modified_gmt":"2012-06-16T02:40:00","slug":"may-13-shrimp-fresh-squash-over-pasta","status":"publish","type":"post","link":"http:\/\/52sundaydinners.com\/recipes\/may-13-shrimp-fresh-squash-over-pasta\/","title":{"rendered":"Shrimp &#038; Fresh Squash Over Pasta"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2012\/05\/shrimp2-mod.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1342\" title=\"shrimp and veggies over pasta\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2012\/05\/shrimp2-mod-580x376.jpg\" alt=\"\" width=\"580\" height=\"376\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2012\/05\/shrimp2-mod-580x376.jpg 580w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2012\/05\/shrimp2-mod-300x194.jpg 300w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2012\/05\/shrimp2-mod.jpg 1113w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a>This should work fine for any Spring Sunday Dinner.\u00a0 I&#8217;m posting this from my mother&#8217;s kitchen in Oxford, Mississippi, where she is in poor health.\u00a0 This post will be featured on Mother&#8217;s Day.\u00a0 My mom (Mama Sara) seemed to really enjoy this meal.\u00a0 I know it will make me think of her whenever we serve it in the future.<\/p>\n<h2>Ingredients:<\/h2>\n<p>These quantities serve four (4 ) adults.\u00a0 Double or triple it as required for your family size.<\/p>\n<ul>\n<li>1 Tablespoon &#8211; Extra Virgin Olive Oil<\/li>\n<li>1 Tablespoon &#8211; Butter<\/li>\n<li>1 Small &#8211; Yellow or White Onion, chopped<\/li>\n<li>3 Cloves &#8211; Fresh Garlic, minced<\/li>\n<li>2 Small Tomatoes &#8211; Diced<\/li>\n<li>6 Fresh Basil Leaves &#8211; Cut into ribbons<\/li>\n<li>1 Teaspoon &#8211; Italian Seasoning (I prefer <a href=\"http:\/\/52sundaydinners.com\/recipes\/sicilian-blend-italian-seasoning\/\" target=\"_blank\">Dean Jacobs Sicilian Blend<\/a>)<\/li>\n<li>1\/2 Teaspoon &#8211; Salt<\/li>\n<li>1\/4 Teaspoon &#8211; Finely Ground Black Pepper<\/li>\n<li>3 Each &#8211; Small Yellow Squash &#8211; Sliced<\/li>\n<li>3\/4 Pound &#8211; Uncooked Shrimp &#8211; Size 50-60 (Fresh preferred, but may be frozen)<\/li>\n<li>10 oz.
