{"id":18,"date":"2010-03-22T06:02:46","date_gmt":"2010-03-22T06:02:46","guid":{"rendered":"http:\/\/52sundaydinners.com\/recipes\/?p=18"},"modified":"2011-09-19T04:28:30","modified_gmt":"2011-09-19T04:28:30","slug":"simple-italian-soup-like-nana-made","status":"publish","type":"post","link":"http:\/\/52sundaydinners.com\/recipes\/simple-italian-soup-like-nana-made\/","title":{"rendered":"Simple Italian (Sicilian) Soup Like Nana Made"},"content":{"rendered":"<p><a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3319.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-72\" style=\"margin: 0px; border: 1px solid black;\" title=\"IMG_3319-588x350\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3319-588x350.jpg\" alt=\"\" width=\"588\" height=\"350\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3319-588x350.jpg 588w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3319-588x350-300x178.jpg 300w\" sizes=\"auto, (max-width: 588px) 100vw, 588px\" \/><\/a><\/p>\n<p>Both of my mother&#8217;s parents came to America from a small town in Sicily when they were teenagers.\u00a0 They came from the town of San Ambrogio.\u00a0 It is near Cefelu and not far from Palermo. \u00a0 My grandmother was a great cook and she coupled her gift with a constant desire to feed the masses.<\/p>\n<p>I grew up in the 50s and 60s living in small town America.\u00a0 The town was Greenville, Mississippi.\u00a0 My parents and my mother&#8217;s parents lived on the same street, kind of like Ray Barone of <em><strong>Everybody Loves Raymond<\/strong><\/em>, only we lived down the street from my grandparents, not across the street, and my grandmother was not a witch.<\/p>\n<p>I can&#8217;t remember a time when my grandmother did not have <span style=\"text-decoration: underline;\">something<\/span> on the stovetop cooking for the next meal.\u00a0 Often it was home made spaghetti sauce with ingredients from her garden, but she also cooked an incredible Sicilian Soup.\u00a0 It was <span style=\"text-decoration: underline;\">not<\/span> flavored like Italian Minestrone, but was a mild vegetable and beef or chicken based stock.\u00a0 The smell of Parmesan cheese was irresistible and she used a variety pasta noodles, depending what she had on hand.<\/p>\n<p>She did not learn to drive until my grandfather became ill late in life, so she often incorporated ingredients she had on hand and incorporated fresh vegetables and herbs from her garden.\u00a0 You can do the same thing.\u00a0 This meal can be prepared for pennies a serving and will be well appreciated by your family.<\/p>\n<p><a rel=\"attachment wp-att-87\" href=\"http:\/\/52sundaydinners.com\/recipes\/simple-italian-soup-like-nana-made\/img_3307\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-87\" style=\"border: 1px solid black; margin: 7px;\" title=\"IMG_3307\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3307-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3307-300x225.jpg 300w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3307-600x450.jpg 600w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/IMG_3307.jpg 1600w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>My grandmother&#8217;s desire to always be cooking was intentional.\u00a0 There were always people dropping by their home, sometimes for a couple of hours and sometimes for days or even weeks.\u00a0 Priests and Nuns from St. Joseph&#8217;s Catholic Church often joined my grandparents for dinner.\u00a0 My grandparents always made their guests feel welcome and dishes like this Sicilian Soup would always cause them to leave full.<\/p>\n<p id=\"firstHeading\">You can top this meal off with a simple slice of Garlic Bread and possibly a Salad and you are done.\u00a0 Bon App\u00e9tit!<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 Lb &#8211; Sirloin Steak (You may substitute chicken or Italian sausage)<\/li>\n<li>2 cups &#8211; Chopped Celery<\/li>\n<li>2 Cups &#8211; Chopped Carrots<\/li>\n<li>1 &#8211; Medium White or Yellow Onion, Diced<\/li>\n<li>2 Cloves &#8211; Garlic, Minced<\/li>\n<li>1\/4 Cup &#8211; Finely graded Parmesan Cheese<\/li>\n<li>12 oz &#8211; Orzo Pasta Noodles (or other suitable small noodles such as mini-stars)<\/li>\n<li>1 Teaspoon &#8211; Italian Seasoning<\/li>\n<li>1 Teaspoon &#8211; Salt<\/li>\n<li>2 Quarts &#8211; Water<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>The meat should be seared in a dutch oven for approximately 5 minutes per side on medium heat setting.<\/li>\n<li>Remove steak. While cutting the steak into 1\/2&#8243;\u00a0 or 3\/4&#8243; cubes, saute the onions and garlic. That&#8217;s when you&#8217;ll hear, &#8220;Papa&#8217;s cooking!&#8221;\u00a0 Nothing smells better.<\/li>\n<li>Add 2 quarts of water<\/li>\n<li>Return the steak with the celery (including the leaves) and carrots.<\/li>\n<li>Cover and cook on low heat for 1 hour.<\/li>\n<li>Prepare Orzo per the manufacturers instructions.\u00a0 Start Orzo so that it is ready in the same time frame as the other ingredients.<\/li>\n<\/ol>\n<h2>Serves 8 Adults<\/h2>\n<h2>Variations<\/h2>\n<p>If you are lucky to have fresh Oregano and Basil add that instead of the dry Italian Seasoning.\u00a0 Provide fresh ground Parmesan Cheese at the table.\u00a0 Salt and pepper to taste.<\/p>\n<p>Nana used this basic recipe and substituted whatever meat she had available, beef, pork, chicken, Italian Sausage. \u00a0 She would also make enough soup to feed a small army and would freeze quart-sized containers &#8230; Nana&#8217;s Fast Food!<\/p>\n<p>Nana would often make her own bread.\u00a0\u00a0 She baked it in bread pans, unlike French or Italian bread that we now see, that is baked on flat sheets.\u00a0 She cooked a classic Italian bread that would have a hard European crust a couple of hours after she removed it from the oven.\u00a0 It almost never lasted that long, and was usually gone while it was still warm.\u00a0 Man, I sure miss her!<\/p>\n<div id=\"attachment_247\" style=\"width: 590px\" class=\"wp-caption alignnone\"><a rel=\"attachment wp-att-247\" href=\"http:\/\/52sundaydinners.com\/recipes\/simple-italian-soup-like-nana-made\/nana\/\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-247\" class=\"size-large wp-image-247\" title=\"Nana\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/Nana-580x415.jpg\" alt=\"\" width=\"580\" height=\"415\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/Nana-580x415.jpg 580w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2010\/08\/Nana-300x214.jpg 300w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a><p id=\"caption-attachment-247\" class=\"wp-caption-text\">Nana Sarullo - 2nd From Left<\/p><\/div>\n<!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>Both of my mother&#8217;s parents came to America from a small town in Sicily when they were teenagers.\u00a0 They came from the town of San Ambrogio.\u00a0 It is near Cefelu and not far from Palermo. \u00a0 My grandmother was a great cook and she coupled her gift with a constant desire to feed the masses.
