{"id":1903,"date":"2013-07-16T03:32:31","date_gmt":"2013-07-16T03:32:31","guid":{"rendered":"http:\/\/52sundaydinners.com\/recipes\/?p=1903"},"modified":"2013-08-04T22:43:02","modified_gmt":"2013-08-04T22:43:02","slug":"salmon-croquettes-a-southern-favorite","status":"publish","type":"post","link":"http:\/\/52sundaydinners.com\/recipes\/salmon-croquettes-a-southern-favorite\/","title":{"rendered":"Salmon Croquettes &#8211;  A Southern Favorite"},"content":{"rendered":"<p><a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2013\/07\/Easy-Salmon-Croquette-Ready-to-Serve.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1904\" title=\"Easy Salmon Croquette Ready to Serve\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2013\/07\/Easy-Salmon-Croquette-Ready-to-Serve-580x379.jpg\" alt=\"\" width=\"580\" height=\"379\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2013\/07\/Easy-Salmon-Croquette-Ready-to-Serve-580x379.jpg 580w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2013\/07\/Easy-Salmon-Croquette-Ready-to-Serve-300x196.jpg 300w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2013\/07\/Easy-Salmon-Croquette-Ready-to-Serve.jpg 1929w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a><\/p>\n<p>I can almost hear the grease popping in Mama Sara&#8217;s cast iron skillet as the housekeeper (Josephine) prepared a batch of\u00a0 Salmon Croquettes. \u00a0 These tasty patties have not been elevated to the status of crab cakes in recent years, but Salmon Croquettes taste great, just like it&#8217;s cousin the crab cake,\u00a0 and are equally easy to prepare.<\/p>\n<p>It&#8217;s been YEARS since I&#8217;ve eaten Salmon Croquette, so I called up one of my favorite &#8220;little chefs&#8221; to help me prepare this one.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>2 Cans &#8211; 14.75 oz Fancy Alaskan Pink Salmon, such as Pink Beauty<\/li>\n<li>2 Cups &#8211; Panko Bread Crumbs with Italian Seasoning (or use plain bread crumbs, plus 1 Teaspoon of Italian Seasoning)<\/li>\n<li>3 Each &#8211; Scallions, cut into thin rings<\/li>\n<li>1 Small &#8211; Yellow Onion, Chopped Fine<\/li>\n<li>4 Each &#8211; Large Eggs<\/li>\n<li>1 Each &#8211; Lemon, Juiced<\/li>\n<li>2 Teaspoons -Salt<\/li>\n<li>2 Teaspoons &#8211;\u00a0 Old Bay Seasoning<\/li>\n<li>Vegetable Oil For Frying<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Step #1 &#8211; if there is a youngster in the house, let him\/her help<\/li>\n<li>Remove any unwanted bones and skin from the salmon.<\/li>\n<li>Combine ingredients in a mixing bowl. Blend completely.<\/li>\n<li>Roll mixture into balls a little larger than golf balls. Place on waxed paper.<\/li>\n<li>Flatten the balls by hand until they are 3&#8243; &#8211; 3.5&#8243; in diameter.<\/li>\n<li>Add a thin layer of vegetable oil into a 12&#8243; skillet and bring to a medium high heat.<\/li>\n<li>Cook uncovered until each side is a golden\/brown\/pink color. This will take about 6 minutes per side.<\/li>\n<li>Replenish the oil that is absorbed by the salmon croquettes a teaspoon at a time.<\/li>\n<li>Serve hot, with catchup and\/or lemon
