Because of the Syrian influence in the town, it was easy for my parents to order &#8220;kibbie meat&#8221; and it would be chopped and ground to the proper specifications.\u00a0 [See below]\u00a0 The local grocers included Fava&#8217;s Grocery and Sherman&#8217;s Grocery, both on South Main Street.\u00a0 I&#8217;m sure there were others, but those stores served MY neighborhood.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>4 Pounds\u00a0 &#8211; Lean Top Round<\/li>\n<li>3.5 Cups &#8211; Bulgur Wheat, Medium Crush, #1<\/li>\n<li>2 Each &#8211; Large Onions<\/li>\n<li>1 Tablespoon &#8211;\u00a0 Extra Virgin Olive Oil<\/li>\n<li>2 Tablespoons &#8211;\u00a0 Salt<\/li>\n<li>2 Teaspoons &#8211;\u00a0 Pepper<\/li>\n<li>1 Teaspoon &#8211;\u00a0 Ground Cumin Seed<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Rinse wheat in strainer.<\/li>\n<li>Soak wheat in a mixing bowl of water for 30 &#8211; 40 minutes<\/li>\n<li>Trim ANY fat from the top round. Cube meat and prepare to grind it.<\/li>\n<li>Grind meat to a &#8220;chili grind&#8221; (Plate size 8\/10)<\/li>\n<li>Remove 3 cups of coarse meat and place it in a skillet with the extra virgin olive oil and 1\/2 onion, chopped, and the ground cumin seed.<\/li>\n<li>Cook filling until the meat is browned and the onions are clear.<\/li>\n<li>Rinse wheat in strainer and return add to large mixing bowl.<\/li>\n<li>Continue to grind the remainder of the meat, making two passes through a fine plate.
