Mardi Gras in on a Tuesday, but try this gumbo recipe the Sunday to celebrate Mardi Gras.<\/p>\n<p>Louisiana cuisine is famous for being spicy, flavorful and hearty. Having lived in Louisiana, I can tell you that in Southern Louisiana gathering for a good meal means meeting with family.\u00a0 In the spirit of 52SundayDinners.com I present what I think is a solid recipe for gumbo that will hold up among recipes in South Louisiana.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>4 Ounces &#8211;\u00a0 Kary&#8217;s Dry Roux<\/li>\n<li>5 Pounds &#8211;\u00a0 Boneless Chicken Breast, cubed<\/li>\n<li>1.5 Pounds &#8211; Smoked Sausage, sliced (Andouille sausage is preferred by the purists.\u00a0 I used smoked turkey sausage for a milder flavor the the children) See note below.<\/li>\n<li>1 Pound &#8211;\u00a0 Shrimp, Gulf grown. See note below.<\/li>\n<li>1 Large &#8211; Onion, chopped<\/li>\n<li>6 Each &#8211;\u00a0 Green Onions or Scallions &#8211; Cut into 1\/4&#8243; slices after removing the top 1\/3 and the roots<\/li>\n<li>5 Ribs &#8211; Celery, chopped<\/li>\n<li>1 Large &#8211; Bell Pepper, chopped (optional)<\/li>\n<li>6 Cloves &#8211; Garlic, minced<\/li>\n<li>2 Cups &#8211; Fresh Parsley, stems removed<\/li>\n<li>4 Quarts &#8211; Water from South Louisiana (If you can&#8217;t get this, use your tap water!)<\/li>\n<li>1 Can &#8211; Minced Tomatoes &#8211; 14 Ounce Can<\/li>\n<li>2 Teaspoon &#8211; Salt<\/li>\n<li>1\/2 Teaspoon &#8211; Finely Ground Black Pepper<\/li>\n<li>1\/2 Teaspoon &#8211; Finely Ground Cayenne Pepper<\/li>\n<li>1 Teaspoon &#8211; Superior Touch Lobster Base<\/li>\n<li>2 Each &#8211; Bay Leaves<\/li>\n<li>1 Pound &#8211; Pre-sliced Frozen Okra<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Begin with a a BIG pot or Dutch Oven.\u00a0 It will need to have the capacity to hold at least 11 quarts of liquid.<\/li>\n<li>Bring 4 quarts of water to a boil and add Kary&#8217;s Dry Roux.\u00a0 Stir until dry mix is fully incorporated.<a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/KaryNFR8.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-2126\" title=\"KaryNFR8\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/KaryNFR8-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/KaryNFR8-225x300.jpg 225w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/KaryNFR8-435x580.jpg 435w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/KaryNFR8.jpg 648w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/li>\n<li><a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/Louisiana-Gumbo-02-StiringTheRoux.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-2120\" title=\"Louisiana-Gumbo-02-StiringTheRoux\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/Louisiana-Gumbo-02-StiringTheRoux-580x384.jpg\" alt=\"\" width=\"580\" height=\"384\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/Louisiana-Gumbo-02-StiringTheRoux-580x384.jpg 580w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/Louisiana-Gumbo-02-StiringTheRoux-300x198.jpg 300w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a>As Roux continues to boil, saute onions, celery, garlic (and optional bell pepper)\u00a0 in a large skillet. Once onions become clear, add to the Roux.<a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/Louisiana-Gumbo-01-Saute-Onions-and-Celery.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-2122\" title=\"Louisiana-Gumbo-01-Saute-Onions-and-Celery\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/Louisiana-Gumbo-01-Saute-Onions-and-Celery-580x390.jpg\" alt=\"\" width=\"580\" height=\"390\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/Louisiana-Gumbo-01-Saute-Onions-and-Celery-580x390.jpg 580w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2014\/02\/Louisiana-Gumbo-01-Saute-Onions-and-Celery-300x201.jpg 300w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a><\/li>\n<li>Add the fresh cubed chicken to the hot skillet and partially cook it.\u00a0 Cook 2.5# at a time.\u00a0 This will require two skillets or two steps. color.<\/li>\n<li>Serve with white rice, using basic instructions: Boil 8 cups of water in a really large saucepan or small Dutch oven.\u00a0 Add 4 tablespoons of butter, 4 teaspoons of salt and 4 cups of rice.\u00a0 Return to a boil.\u00a0 Reduce heat to a low simmer.\u00a0 Cover and cook for 22 minutes, without peeking, so it will steam.\u00a0 I repeat &#8211;
