{"id":2495,"date":"2014-12-24T23:53:18","date_gmt":"2014-12-24T23:53:18","guid":{"rendered":"http:\/\/52sundaydinners.com\/recipes\/?p=2495"},"modified":"2015-01-23T07:10:48","modified_gmt":"2015-01-23T07:10:48","slug":"roast-duck-with-orange-glaze-sauce","status":"publish","type":"post","link":"http:\/\/52sundaydinners.com\/recipes\/roast-duck-with-orange-glaze-sauce\/","title":{"rendered":"Roasted Duck with Orange Glaze"},"content":{"rendered":"<p>My dad is a man of many talents.\u00a0 You might say he is a Renaissance Man.\u00a0 He intentionally taught his five children a variety of life skills, including gardening and &#8220;farming&#8221; on our 3\/4 acre city lot in Greenville, Mississippi.\u00a0 On that small parcel, we often had chickens and ducks.\u00a0 There were times when we also had guineas.\u00a0 We never had over about a dozen birds at a time, but occasionally there would be a &#8220;house-cleaning&#8221; and all of our feathered friends would be gone.\u00a0 Often one of the truck drivers from the lumber yard would help dad kill and clean the birds.\u00a0 At the end of they process they would leave with a healthy box of birds for their family and our freezer would swell with fresh chickens and\/or ducks as well. It was like a form of share cropping.\u00a0 As my brothers and I got older, we would help in the process.\u00a0 My brother, Paul, was the youngest on and was especially fast.\u00a0 He could usually catch the chickens before they hit the ground.\u00a0 Yes, they do run with their heads off!<\/p>\n<p>With this rich experience in my memory, you would think I remember eating duck often, but I only remember my grandmother Sarullo fixing duck in her rich tomato &#8220;gravy.&#8221;\u00a0 That&#8217;s tomato sauce to most folks. \u00a0 And I remember that being very good!\u00a0 This recipe is an easy dish that leans on oriental or eclectic flavors more than any others.\u00a0 Our current generation loves it.\u00a0 Ever the young children are up for it, even if it doesn&#8217;t &#8220;taste like chicken.&#8221;<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 Each &#8211; Whole Duck, 5-6 pounds<\/li>\n<li>2 Teaspoons &#8211; Salt<\/li>\n<li>2 Teaspoons &#8211; Finely Ground Pepper<\/li>\n<li>2 Teaspoons &#8211; Paprika<\/li>\n<li>2-3 Ribs &#8211; Celery, cut to short sections<\/li>\n<li>1 Whole &#8211; Garlic Head, peeled<\/li>\n<li>1 Each &#8211; Wooden Skewer<\/li>\n<li>1 Medium &#8211; Orange for stuffing<\/li>\n<li>2 Medium &#8211; Oranges for garnishing<\/li>\n<\/ul>\n<h2>Glaze Ingredients<\/h2>\n<ul>\n<li>2.5 Tablespoons &#8211; Sugar<\/li>\n<li>1\/2 Cup &#8211; Brown Sugar<\/li>\n<li>2 Tablespoons &#8211; Cornstarch<\/li>\n<li>1\/2 Teaspoon &#8211; Salt<\/li>\n<li>1 Cup &#8211; Fresh Orange Juice<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Begin with a fresh or fully thawed duck.\u00a0 If it is &#8220;store bought&#8221;
