{"id":2527,"date":"2015-01-06T05:07:59","date_gmt":"2015-01-06T05:07:59","guid":{"rendered":"http:\/\/52sundaydinners.com\/recipes\/?p=2527"},"modified":"2015-02-12T04:04:30","modified_gmt":"2015-02-12T04:04:30","slug":"chicken-and-dumplins-rolled-method","status":"publish","type":"post","link":"http:\/\/52sundaydinners.com\/recipes\/chicken-and-dumplins-rolled-method\/","title":{"rendered":"Chicken and Dumplins &#8211; Rolled Method"},"content":{"rendered":"<p><a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2015\/01\/05-Chicken-and-Rolled-Dumplins-in-the-pot.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-2528\" title=\"05-Chicken and Rolled Dumplins in the pot\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2015\/01\/05-Chicken-and-Rolled-Dumplins-in-the-pot-580x486.jpg\" alt=\"\" width=\"580\" height=\"486\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2015\/01\/05-Chicken-and-Rolled-Dumplins-in-the-pot-580x486.jpg 580w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2015\/01\/05-Chicken-and-Rolled-Dumplins-in-the-pot-300x251.jpg 300w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2015\/01\/05-Chicken-and-Rolled-Dumplins-in-the-pot.jpg 1870w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a>Family dinners should be comfortable, friendly and welcoming.\u00a0 Nothing says <em>comfort, friendship or welcome<\/em> better than Chicken &amp; Dumplings.\u00a0 It is FUN to make, allows you the flexibility to be creative, and is a perfect opportunity to include your children or grandchildren in the process.\u00a0 If you search online for &#8220;Chicken &amp; Dumplings&#8221; you will find that most dumplings are ROUND and formed with a spoon.\u00a0 In the Mississippi Delta where Teresa and I grew up, dumplings were rolled flat and cut.\u00a0 That&#8217;s MY kind of dumpling.\u00a0 Your family will love this recipe and ask you soon after when Chicken &amp; Dumpling Night will cycle back around!<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 Each &#8211; Large Fresh Chicken (7 pounds)<\/li>\n<li>1 Each &#8211; Large Onion, chopped finely<\/li>\n<li>4 Cloves &#8211; Garlic, minced<\/li>\n<li>3 Tablespoons &#8211; Butter<\/li>\n<li>10 Cups &#8211; Water<\/li>\n<li>2 Teaspoons &#8211; Salt<\/li>\n<li>1 Teaspoon &#8211; Finely Ground Black Pepper<\/li>\n<li>1 Teaspoon &#8211; Poultry Seasoning (or 1\/2 teaspoon of sage and 1\/2 teaspoon of thyme)<\/li>\n<li>4 Ribs &#8211; Celery, chopped<\/li>\n<li>4 Each &#8211; Carrots, chopped<\/li>\n<li>2 Cups &#8211; Curly Parsley Leaves, slightly chopped<\/li>\n<li>1 Cup &#8211; Frozen English Peas (optional)<\/li>\n<\/ul>\n<h2>Dumpling Ingredients<\/h2>\n<ul>\n<li>4 Cups &#8211; All Purpose Flour<\/li>\n<li>1 Tablespoon &#8211; Baking Powder<\/li>\n<li>1 Teaspoon &#8211; Salt<\/li>\n<li>3 Tablespoons- Melted Butter<\/li>\n<li>3\/4 Cup &#8211; Milk<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Select a large Dutch oven, large enough to hold the chicken, liquid and the future dumplings.<\/li>\n<li>Saute the onion in the 3 tablespoons of butter until the onions are clear.<\/li>\n<li>Remove any baggage from the interior of the bird and discard, except for the neck, and add the bird and neck bone to the pot.<\/li>\n<li>Add the garlic, water, salt, pepper and poultry seasoning and bring to a boil.\u00a0 Make sure the water covers the chicken.<\/li>\n<li>Boil for 1 hour and 15 minutes until the chicken almost falls apart.<\/li>\n<li>Remove the chicken and place on a large cookie sheet to cool.\u00a0 Separating the bird will speed the cooling process.<\/li>\n<li>Skim off any &#8220;foam&#8221; impurities that may be floating in the pot.<\/li>\n<li>Add the carrots and celery to the pot.\u00a0 Return to a boil.<\/li>\n<li>Remove chicken meat from the bones. Break into bite-sized pieces and return the meat to the pot.<\/li>\n<li>Combine the dumpling ingredients in a mixing bowl until they are pliable, adding flour or milk if needed.<\/li>\n<li>Using flour on your counter-top and rolling pin, roll your dumpling mix into a 1\/8&#8243;
