{"id":2553,"date":"2015-01-08T04:24:56","date_gmt":"2015-01-08T04:24:56","guid":{"rendered":"http:\/\/52sundaydinners.com\/recipes\/?p=2553"},"modified":"2015-02-12T06:13:45","modified_gmt":"2015-02-12T06:13:45","slug":"indian-curry-chicken-and-rice","status":"publish","type":"post","link":"http:\/\/52sundaydinners.com\/recipes\/indian-curry-chicken-and-rice\/","title":{"rendered":"Indian Curry Chicken and Rice"},"content":{"rendered":"<p><a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2015\/01\/06-Indian-Curry-Chicken-with-Rice-ready-to-serve.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-2554\" title=\"06-Indian-Curry-Chicken-with-Rice-ready-to-serve\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2015\/01\/06-Indian-Curry-Chicken-with-Rice-ready-to-serve-580x379.jpg\" alt=\"\" width=\"580\" height=\"379\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2015\/01\/06-Indian-Curry-Chicken-with-Rice-ready-to-serve-580x379.jpg 580w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2015\/01\/06-Indian-Curry-Chicken-with-Rice-ready-to-serve-300x196.jpg 300w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a>OK, I&#8217;ll have to admit that I am stretching a little out of my comfort zone with this recipe.\u00a0 I wanted my family to experience a new flavor palate and we had never eaten Eastern Indian food as a family.\u00a0 In preparation, I read a few recipes and watched several YouTube videos on Indian cuisine.\u00a0 There were multiple references in each video about following Mama&#8217;s instructions.\u00a0 All of this made me a little unqualified and timid.\u00a0 I also did not want to shock my family with flavors that would be so strong that it would be unpleasant to eat.\u00a0 So this is my &#8220;Authentic Americanized&#8221; Indian Chicken Curry recipe.<\/p>\n<p>I can tell you my family loved it.\u00a0 Once I purchased a couple of ounces of each of the of necessary spices from our local version of Whole Foods, we were ready to cook.<\/p>\n<p>Side note: I printed pictures of a flattened globe view of India, as well as pictures of the Indian people, the Taj Mahal, Indian food, its colorful landscape and picture of bins spices in the open air Indian market.\u00a0 Just before we said our blessing, we discussed the differences and similarities we share with the people of India. \u00a0 I also let them taste a small piece of fresh ginger.\u00a0 Then we had a Curry feast. \u00a0 It was a fun night.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>10-12 Each &#8211; Fresh Chicken Thighs<\/li>\n<li>3 Tablespoons &#8211; Fresh Ginger<\/li>\n<li>10 Cloves &#8211; Garlic<\/li>\n<li>2 Tablespoons &#8211; Olive Oil or Canola Oil<\/li>\n<li>2 Each &#8211; Small Onions, choppped<\/li>\n<li>1 Each &#8211; Small Lime, juiced<\/li>\n<li>1 Teaspoons &#8211; Curry Powder<\/li>\n<li>1 Teaspoon &#8211; Ground Cumin<\/li>\n<li>1 Teaspoon &#8211; Ground Turmeric<\/li>\n<li>1 Tablespoon &#8211; Salt<\/li>\n<li>1 Teaspoon &#8211; Black Pepper<\/li>\n<li>1 Teaspoon &#8211; Dry Ground Ginger<\/li>\n<li>6 Each- Roma Tomatoes, diced<\/li>\n<li>2 Each &#8211; 14.5 oz. Cans of Diced Tomatoes<\/li>\n<li>3 Cups &#8211; Uncooked\u00a0 White Rice or Basmati Rice<\/li>\n<li>1 Cup &#8211; Cilantro Leaves<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Prepare to use a large pot.\u00a0 I have a pot that is 13&#8243; in diameter and 5&#8243; deep, with a lid.\u00a0 It is ideal.\u00a0 A super-sized skillet will also work fine.<\/li>\n<li>Place ginger, garlic and olive (canola) oil in a food processor or blender and mince.<\/li>\n<li>Use the oily garlic\/ginger mixture to saute the onions until the onions are clear.<\/li>\n<li>Add the lime juice, <span style=\"text-decoration: underline;\">all<\/span> of the seasonings and the chicken to the pot. <a \/><\/a><\/li>\n<li>Bring to a high simmer and simmer for 1 hour and 20 minutes, turning the chicken over after 40 minutes.<\/li>\n<li>Remove the chickens thighs and add the 3 cups of rice to the \/><\/a><\/li>\n<li>Cover and continue to simmer for 24 minutes.\u00a0 It will be necessary to stir the rice every 8 minutes to keep it from sticking and burning.<a \/><\/a><\/li>\n<li>Return the chicken to the top side of the pot the last 5 minutes to steam and prepare to serve the chicken piping hot.<\/li>\n<li>Garnish with Cilantro and enjoy.<\/li>\n<\/ol>\n<p
