That&#8217;s right, those over-sized red, white &amp; green cans with the Chef on the label.\u00a0 They are filled with who-knows-what!<\/p>\n<p>After you prepare this signature dish, you will forever be remembered as the <strong>Ravioli King <\/strong>or the<strong> Ravioli Queen<\/strong>.\u00a0 It&#8217;s that good.<\/p>\n<p>I remember very vividly the afternoons spent at my <a title=\"Nana's Soup\" href=\"http:\/\/52sundaydinners.com\/recipes\/simple-italian-soup-like-nana-made\/\">grandmother<\/a>&#8216;s house when she would cook.\u00a0 When she cooked ravioli, she would invite her sister-in-law. Neither one of them drove a car, but they lived just about a block apart.\u00a0 They would produce several flat trays of delicious ravioli and freeze most of them.\u00a0 Ravioli freezes well.<\/p>\n<p><a href=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2011\/04\/table-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-717\" style=\"border: 1px solid black; margin: 5px;\" title=\"Nana's Table-2\" src=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2011\/04\/table-2-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" srcset=\"http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2011\/04\/table-2-150x150.jpg 150w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2011\/04\/table-2-70x70.jpg 70w, http:\/\/52sundaydinners.com\/recipes\/wp-content\/uploads\/2011\/04\/table-2-110x110.jpg 110w\" sizes=\"auto, (max-width: 150px) 100vw, 150px\" \/><\/a>My Nana had two tables in her 20&#8242; x 20&#8242; kitchen.\u00a0 That&#8217;s about the size of a double garage.\u00a0 One table was made of fine hardwood and was for the adults.\u00a0 The other table was chrome and yellow Formica like the one pictured here. It was 1950s vintage.\u00a0 I was for just for the kids &#8230;. and the ravioli.\u00a0 I remembered days when the flour and wooden rolling pins would be flying across that yellow Formica table. Man!<\/p>\n<p>Everything was home-made.\u00a0 Nana made her own filling, dough-pockets and marinara sauce. Classic Italian herbs such as basil (basilico) and oregano (origano)\u00a0 always came form her garden.\u00a0 She also grew fresh fennel (finocchi) that was used to season the best Italian sausage you can imagine.<\/p>\n<p>I&#8217;m proud that my brother, Peter and I were able to write-down her sauce recipe before she passed away.\u00a0 When I use the word &#8220;recipe&#8221; here, I mean that we got her to make a batch of marinara sauce and stopped her as she entered each ingredient. We measured each one before it entered the dutch oven.\u00a0 It was a little awkward for all of us, but we captured the Holy Grail.\u00a0 We still use her recipe occasionally, when time allows.\u00a0 I still have the original notes written from 25 years ago and will make the &#8220;Secret Sauce&#8221; available here at 52SundayDinners.com very soon.<\/p>\n<p>Back to the ravioli &#8230;<\/p>\n<h2>Pasta Ingredients<\/h2>\n<ul>\n<li>8 Cups &#8211; All Purpose Flour<\/li>\n<li>10 &#8211; Eggs<\/li>\n<li>1\/2 Cup &#8211; Water<\/li>\n<\/ul>\n<h2>Shrimp Ingredients<\/h2>\n<ul>\n<li>1.5 Pounds &#8211; Fresh or Pre-cooked, Peeled &amp; De-veined Shrimp<\/li>\n<li>1 Teaspoon &#8211; Salt<\/li>\n<li>2 Tablespoons &#8211; Extra Virgin Olive Oil<\/li>\n<li>1 Tablespoon &#8211; Butter<\/li>\n<li>2 Teaspoons &#8211; Dried Italian Seasoning<\/li>\n<li>3 &#8211; Large Cloves of Garlic<\/li>\n<\/ul>\n<h2>Filling Ingredients<\/h2>\n<ul>\n<li>1\/3 Cup &#8211; Ricotta Cheese<\/li>\n<li>1\/3 Cup &#8211; Grated Parmesan Cheese<\/li>\n<li>2 &#8211; Eggs<\/li>\n<li>1 Teaspoon &#8211; Salt<\/li>\n<li>1\/2 Teaspoon &#8211;\u00a0 Finely Ground Pepper<\/li>\n<\/ul>\n<h2>Sauce Ingredients<\/h2>\n<ul>\n<li>2 Cups &#8211;\u00a0 Your favorite prepared sauce.\u00a0 Sorry Nana.\u00a0 I&#8217;ll post your &#8220;Secret Sauce&#8221; recipe soon.<\/li>\n<li>1 Cup &#8211;\u00a0 Heavy Cream<\/li>\n<li>1 Tablespoon &#8211; Extra Virgin Olive Oil<\/li>\n<li>1\/4 Cup &#8211; White Wine<\/li>\n<li>1 Clove -Garlic, Minced<\/li>\n<\/ul>\n<h2>Garnish<\/h2>\n<p>1\/4 Cup of Fresh Basil Leaves<\/p>\n<h2>Preparation<\/h2>\n<ol>\n<li>Begin by preparing the pasta.<\/li>\n<li>There are two way to make the basic pasta.\n<ul>\n<li>METHOD 1 &#8211; Place flour on the countertop.\u00a0 Create a &#8220;bowl&#8221;\u00a0 in the center of the flour and add the eggs to the center. Incorporate the the flour into the eggs until it is monolithic. Kneed for a minute or two.\u00a0 Add water if necessary.<\/li>\n<li>Method 2 &#8211; Cut recipe in half.\u00a0 The following ingredients are easily batched by using 4 cups of flour, 5 eggs and 1\/4 cup of water. Place ingredients in 5 &#8211; 6 quart mixer and blend until the mixture is firm and monolithic.\u00a0 Add water only if your mix requires it.<\/li>\n<\/ul>\n<\/li>\n<li>Wrap the one or two balls in plastic wrap and refrigerate until you are finished with the filling and shrimp preparation.<\/li>\n<li>Saute shrimp Salt, Extra Virgin Olive Oil, Butter, Dried Italian Seasoning and Minced Garlic. I usually use pre-cooked shrimp and saute for 3 minutes on low to blend the flavors. Fresh Shrimp will take slightly longer.<\/li>\n<li>Allow shrimp mixture to cool.<\/li>\n<li>Rough-chop shrimp mixture in food processor.<\/li>\n<li>Combine Shrimp mixture and filling ingredients.<\/li>\n<li>Refrigerate combined mixture<\/li>\n<li>Begin pasta forming by cutting 4 cup mixtures into 4 parts.\u00a0 Keep your working surface dusted with all-purpose flour to prevent the pasta from sticking to the countertop or pasta attachment.<\/li>\n<li>Form each pasta segment into a thin rectangle.\u00a0 Run through the pasta maker&#8217;s widest setting.<\/li>\n<li>Reduce the thickness with each pass until the thinnest setting is achieved.<\/li>\n<li>Place the pasta sheets on your counter-top, or extra table (like Nana had.)<\/li>\n<li>Coat the entire face with egg-wash, a 50\/50 mixture of egg-whites and water.<\/li>\n<li>Begin to place the filling on one side.\u00a0 Each Ravioli should contain about 1 teaspoon of shrimp filling.\u00a0 There&#8217;s not worthwhile automated process for this.\u00a0 It&#8217;s a labor of love, however.<\/li>\n<li>Top with a similar sized section of pasta and seal with your fingers. Make sure all air excess air is removed.<\/li>\n<li>Cut the pasta with a zig-zag cutter.\u00a0 Recycle the excess pasta pieces, if needed.<\/li>\n<li>Crimp edges of each ravioli with a form to seal the edges.<\/li>\n<li>Again, make sure your stored pasta is on a flour covered countertop.<\/li>\n<li>Boil Ravioli in salted water in a large pot or Dutch oven with a little Extra Virgin Olive Oil to prevent sticking.\u00a0 Since the pasta is fresh and not dried it will cook quickly.\u00a0 You can cook half or your batch, remove the ravioli, keeping the water hot and add the second batch.<\/li>\n<li>Place pasta sauce ingredients in a skillet and heat until cream is to your liking.\u00a0 This will take just a few minutes on low heat.\u00a0 Please ensure that the cream does not burn.<\/li>\n<li>Serve sauce over the ravioli and garnish with strips of fresh Basil.\u00a0 Leaves may be thinly cut by tightly rolled then leaves and sliced with a sharp knife.<\/li>\n<\/ol>\n<h2>Feeds 8 adults and houseful of hungry kids.\u00a0 Kids love this meal, just as I did when I got to help my Nana.<\/h2>\n<p style=\"text-align: center;\"><a
