Sports Fan Feast – Chicken, Sausage & Asparagus

If you are bummed-out that your favorite pro ball team has jacked-up the price of their tickets to a small fortune, OK a large fortune, here’s your answer.  Invite family and friends over this Sunday Evening for a great meal and a game.  While the weather is still suitable for outdoor grilling enjoy family, friends and pro ball on your new big screen HDTV that you can buy with the money you will save by not buying the tickets from TicketMasters!

This Flaming Feast is a real crowd-pleaser.  Combine the main course of Smoked Chicken with Sausage Links, for variety, and add your favorite vegetables such as Grilled Asparagus and Mashed Potatoes and Salad.

Chicken & Ingredients

  • 4 Whole Chickens
  • 6 Sausage Links
  • Seasoning

Preparation

  1. The  meat is prepared on a charcoal-fueled smoker.  Split the 4 Chickens into 8 Chicken Halves.
  2. Clean the chicken and season liberally with your favorite seasoning.  I prefer a combination of all-season and a Cajun seasoning.
  3. Smoke the chicken and sausage for approximately six (6) hours at 220 degrees.  Smoked chicken will not appear to be fully cooked, even thought it is.  If you can twist the drumstick out easily, it is “fall off the bone” ready.
  4. Each full-grown adult will eat approximately 1/4 of a chicken, so split the chicken halves into fourths.  Combined with the sausage, you can feed a small army of approximately 20 adults.

Grilled Asparagus Side Dish

The Grilled Asparagus will cook best on a gas grille.  This recipe is super-simple.

  • 4 Pounds of Fresh Asparagus
  • 2 Tablespoons of Extra Virgin Olive Oil
  • 1 Large Lemon Juiced
  • 1 Teaspoon of Dry Italian Seasoning
  • 1/2 Teaspoon of Salt

Preparation

  1. Trim the bottom 1″ of the Fresh Asparagus.
  2. Clean Asparagus by hand in HOT water.
  3. Place Asparagus in a casserole dish or cake pan.
  4. Add Extra Virgin Olive Oil, Lemon Juice and Seasoning.
  5. Coat and marinate in the refrigerator for at least 30 minutes.  If you are cooking this on Sunday, begin the marinating process after the chickens begin to cook.
  6. Thirty (30) minutes before kickoff, place the asparagus on your gas grille on a low setting of approximately 300 degrees for approximately 30 minutes.

The rest is up to you.  Use an easy third vegetable like Mashed Potatoes from potato buds.  If you follow the package directions exactly, they will turn out great.  If you want to spice it up a little, combine the potatoes with sauteed onions and garlic, topped with grated cheddar cheese for Garlic Mashed Potatoes.

Corn on the Cob will also be a good starch if Mashed Potatoes are not for you.  Some of the biggest corn I have ever seen is currently available at Hobby Lobby, but it is a little dry.
