OK, so you overlooked the opportunity to cook oriental food for your family a couple of weeks ago. Don’t pass up this challenge. It SOOOOO easy.
This will wake up your taste buds!
Ingredients
- 4 Large – Boneless skinless FRESH Chicken Breasts – Total wt., 3#, cut into 3/4″ cubes
- 6 Each – Italian Zucchini Squash
- 3 Tablespoons – Stick Butter
- 1 Large – White Onion, sliced
- 1/2 Teaspoon – Salt
- 1/4 Teaspoon – Pepper
- 1/ Teaspoon – Dry Granulated Garlic
- 1/2 Teaspoon – Dry Ginger Powder
- 1 Tablespoon – Soy Sauce
Preparation
You may prepare this in a large wok or a large flat griddle, similar to what you use to prepare pancakes. The griddle will allow you to prepare the food at the family table similar to Benihana. If your children or grandchildren are elementary age, they will enjoy the process. Remember the griddle is VERY HOT and you don’t want the have it in reach of a young child.
While we are taking about safety, remember that cooked chicken is great, but uncooked chicken and the liquid from uncooked chicken is dangerous to some young children. Clean any surface or vessel that touches the uncooked chicken and replace your turning/serving instruments half way through the cooking process.
Summary, the wok is better for utility and the griddle is better for show.
- Preheat the wok or griddle to 325 degrees.
- Add all the ingredients except the Soy Sauce, which burns easily.
- Cook for approximately 15 minutes turning frequently so chicken and zucchini will not burn.
- Add Soy Sauce and cook an additional 5 minutes. Chicken must be completely cooked.
Serve with fried rice and egg rolls.
Serves twelve (12) adults and a bunch of kids that love this new style of “Chicken Nuggets.”
