Baked Potato Chips and Mixed Grill

This Potato Side Dish is a popular social media feature, so I thought I would give it a try.  It is easy, tasty and more healthy than the fried alternative.  It is Baked Potato Chips.  Give it a try this Sunday with your favorite MIXED GRILL and you will have a combination that will please any carnivore.

Ingredients

  • 4 Pounds –  Russet Potatoes
  • 1/2 Cup – Extra Virgin Olive Oil
  • Chopsticks
  • Salt
  • Garlic Powder

Optional Ingredients

  • 3/4 Cup –  Grated Cheddar Cheese
  • Additional Seasoning, such as Cajun Seasoning

Instructions

  1. Preheat oven to 400 degrees
  2. Use a sharp knife and chopsticks as a depth guide to cut each potato into extra-thin slices.  Be careful to keep the chopsticks close to the potato to control the depth.
  3. Line a baking sheet with foil and coat the foil with olive oil.
  4. Brush Extra Virgin Olive Oil generously over the potatoes, allowing some to run into the potatoes.
  5. Season liberally with salt and garlic powder.  Think of French Fries or Potato Chips.
  6. Bake for 20 minutes.
  7. Potatoes will begin to separate.  Add more salt!
  8. Add cheese now if you plan to use it.
  9. Bake an additional 15 minutes until potatoes are soft.
  10. Serve with your favorite specialty from the grill such as what you see HERE.

Feeds 8 hungry adults and a bunch of kids that think that potato chips have ridges!
