Classic Pot Roast – Everyone’s Favorite Sunday Dinner

This easy Sunday Dinner is basic GOOD FOOD.  It doesn’t matter what your ethnicity is, you have probably been exposed to this dish in your youth.  The principle, put a combination of good meat and vegetables in a pot after church on Sunday.  Cook it on low heat until dinner.   The result is a nutritious Sunday Dinner that is bursting with flavor. You may use a large Dutch oven or a large crock pot.

Ingredients:

  • 5 Pounds – Beef Chuck Roast
  • 2 Tablespoons – Extra Virgin Olive Oil
  • 2 Each -Large Onions, Rough Chopped
  • 2/3 Cup – East Texas Water (or water from your own kitchen if you’re not lucky enough to live in East Texas)
  • 1 Each –  Celery Bunch, Rough Chopped
  • 2 Pounds – Carrots, Peeled and Rough Chopped
  • 2 Cloves – Garlic, Minced
  • 3/4 Cup – Parsley Leaves, Chopped
  • 5 Tablespoons – All Purpose Flour
  • 2 Each – 14.5 oz. Cans of Cut Green Beans
  • 2 Teaspoons –  Salt
  • 3/4 Teaspoon – Fine Ground Black Pepper
  • 2 Teaspoons – Lee & Perrin’s Worcestershore Sauce
  • 10 Each – Medium Russet Potatoes, Rough Chopped

Preparation:

  1. Turn on some really good music in your kitchen and think of the great feast your family is going to have tonight. Now, go to step 2.
  2. Sear the chuck roast in the olive oil on medium-high heat, until the outer edge is brown.  This will take just a few minutes and will add a good texture to the meat. See photo.
  3. Add onions and cover while you continue to chop the remaining vegetables … and listen to more music.
  4. Add the rest of the ingredients, except for the potatoes, and bring to a boil over medium-high heat.
  5. When it begins to boil, reduce heat to the point where the ingredients bubble SLIGHTLY.  Simmer for 3 hours.
  6. Add potatoes and simmer for an additional hour.

Serves 8 adults and a houseful of hungry children.

Serve with mashed potatoes and a salad and you’re done!

Note1: If you are using a crock pot, use the high setting to bring the ingredients to a boil, then turn to low.

Note 2: This same recipe may be used to produce beef pot pie filling by making 3 adjustments, chop the ingredients including the meat into sugar cube size pieces, double the all purpose flour and cut one hour from the cooking time.
