Cookie Cake From Scratch – Birthday Cookie Cake

If you have regular Sunday Dinners as we propose, you are bound to have several family birthdays.  There is no better way to celebrate than with a cookie cake and ice cream, plus a few presents!

Ingredients

  • 1 1/2 Cups – Nestle(r) Toll House Semi-Sweet Chocolate Morsels
  • 1 3/4 Cups – All Purpose Flour
  • 3/4 Teaspoon – Baking Soda
  • 3/4 Teaspoon – Salt
  • 1 1/2 Sticks – Butter (3/4 Cup)
  • 2 Each – Medium Eggs
  • 3/4 Cup –  Brown Sugar
  • 1/2 Cup – Sugar
  • 3/4 Teaspoon – Vanilla Extract

Preparation

  1. Preheat oven to 375 degrees
  2. Thoroughly grease a 12″ round cookie sheet with at least 1/2″ vertical or sloped sides.
  3. Mix flour, baking soda and salt.  I use a KitchenAid 6 qt mixer on low speed.
  4. Work in the butter, sugar, brown sugar, eggs, vanilla extract and eventually the chocolate.
  5. Spread into pre-greased pan.
  6. Bake on medium rack for 18-20 minutes.
  7. Cool.
  8. Add icing.

Final note: I’m a terrible cake decorator and have only attempted it a few times.  Our daughter Kate is a pro, so I usually hold back and let her perform her magic.  HERE are a few of her creations. When our youngest daughter, Ashley turned 2 years old, I decided to make a cake for her.  She liked butterflies and she liked chocolate, so I made a butterfly shaped chocolate cake.  Sounds good, right?  Well it looked awful.  I added a few M&Ms to jazz it up and my wife and young kids made fun of me for about 30 years.  So this cookie cake has a token dark butterfly, just to show them I really do LOVE them.  Sticks and stones ….
