This simple salad is a great complement to the Chicken Curry that is contained here in 52SundayDinners.com. It is easy to prepare in advance and will keep in your refrigerator for several hours.
Ingredients
- 2 Each – Large Cucumbers, quartered and sliced
- 4 Each – Roma Tomatoes, quartered and sliced
- 1 Each – 16 oz. Can of Chickpeas
- 1 Each – Yellow Bell Pepper, sliced
- 1 Each – Green Bell Pepper, sliced
- 1.5 Tablespoons – Extra Virgin Olive Oil
- 1 Each – Very Small Lemon, juiced
- 2 Teaspoons – Salt
- 1 Teaspoon – Ground Cumin
- 2 Teaspoons – Curry Powder
- 1 Teaspoon – Ground Turmeric
- 1 Teaspoon – Ground Black Pepper
Preparation
- Chop, mix and cover in serving bowl until ready to serve.
