Cucumber Tomato Chickpea Salad

This simple salad is a great complement to the Chicken Curry that is contained here in 52SundayDinners.com.  It is easy to prepare in advance and will keep in your refrigerator for several hours.

Ingredients

  • 2 Each – Large Cucumbers, quartered and sliced
  • 4 Each – Roma Tomatoes, quartered and sliced
  • 1 Each – 16 oz. Can of Chickpeas
  • 1 Each – Yellow Bell Pepper, sliced
  • 1 Each – Green Bell Pepper, sliced
  • 1.5 Tablespoons – Extra Virgin Olive Oil
  • 1 Each – Very Small Lemon, juiced
  • 2 Teaspoons – Salt
  • 1 Teaspoon – Ground Cumin
  • 2 Teaspoons – Curry Powder
  • 1 Teaspoon – Ground Turmeric
  • 1 Teaspoon – Ground Black Pepper

Preparation

  1. Chop, mix and cover in serving bowl until ready to serve.
