Rice-Rice-Rice! We love Rice! We can’t get enough rice, but we like a little variation in our rice dishes. Try this one. It is very simple, tasty.
Ingredients
- 1/2 Cup – Wild Rice
- 1.5 Cups – Short or Long Grain White Rice
- 1 Each – Small Onion, chopped fine
- 2 Teaspoons – Extra Virgin Olive Oil
- 2 Teaspoons – Salt
- 2 Tablespoons – Butter
- 1/2 Teaspoon – Lobster Base (As an option to the Lobster Base, substitute chicken stock for water)
4 Cups – Water
Preparation
- Saute the onion in olive oil until the onion is clear as in the photo.
- When onions are clear, add the wild rice and water.
- Bring to a boil, cover and reduce heat to warm/low and simmer for 30 minutes.
- Add remaining ingredients and return to a boil momentarily.
- Reduce heat and simmer for an additional 22 minutes. Don’t peek. Seriously, the rice should stay covered for 22 minutes.
- Ingredients will be segregated. That’s OK. Stir and serve.
Next time, make a little more.
Serves 8 adults and a bunch of hungry kids.
