Mixed Wild Rice

Rice-Rice-Rice!  We love Rice! We can’t get enough rice, but we like a little variation in our rice dishes.  Try this one.  It is very simple, tasty.

Ingredients

  • 1/2 Cup – Wild Rice
  • 1.5 Cups – Short or Long Grain White Rice
  • 1 Each – Small Onion, chopped fine
  • 2 Teaspoons – Extra Virgin Olive Oil
  • 2 Teaspoons –  Salt
  • 2 Tablespoons –  Butter
  • 1/2 Teaspoon –  Lobster Base (As an option to the Lobster Base, substitute chicken stock for water)

4 Cups – Water

Preparation

  1. Saute the onion in olive oil until the onion is clear as in the photo.
  2. When onions are clear, add the wild rice and water.
  3. Bring to a boil, cover and reduce heat to warm/low and simmer for 30 minutes.
  4. Add remaining ingredients and return to a boil momentarily.
  5. Reduce heat and simmer for an additional 22 minutes.  Don’t peek.  Seriously, the rice should stay covered for 22 minutes.
  6. Ingredients will be segregated.  That’s OK.  Stir and serve.

Next time, make a little more.
Serves 8 adults and a bunch of hungry kids.
