Rich Shrimp Bisque, Mini-Lobsters

Comfort food at its best.  This is a quick and easy recipe for a great rich shrimp bisque with lobster seasoning.  Combine it with garlic bread and salad and you have a real crowd pleaser.

Ingredients

  • 1 Tablespoon of Extra Virgin Olive Oil
  • 1 lb Shrimp Tails
  • 1 Medium Onion, chopped
  • 10 Shallots (Green Onions), Chopped
  • 4 Stalks of Celery, chopped
  • 4 Tablespoons of Butter
  • 4 Tablespoons of Flour
  • 6 Cups of Water
  • 1 Tablespoon of Lobster Base
  • 1/4 Teaspoon of Black Pepper
  • 2 Cups of Heavy Cream

Preparation

  1. Saute Onions & Celery in Extra Virgin Olive Oil in large stockpot.
  2. When onions become transparent, reduce heat and add Butter, Flour, Water, Shallots (Green Onions), Lobster Base and Black Pepper.
  3. Continue to cook on low heat setting for approximately 20 minutes. Stir until flour has sufficiently thickened the bisque. Do not bring to a boil.
  4. Add Shrimp until they become a pink/rose color and begin to firm, approximately 10 minutes.
  5. Add Heavy Cream and continue to stir for 5 minutes.
  6. Salt and pepper to taste.

NOTE: Confirm that your guest do not have allergies to shellfish before serving.
