Preparation for these delicious Skewered Lemon Chicken-Kabobs is easy, but a bit time consuming. Preparation for marinating begins the day before. The result is lean strips of chicken breasts bursting with flavor that your family will love.
Ingredients
- 4 to 5 Pounds – Fresh (never frozen) Boneless Skinless Chicken Breast
- 4 Each – Lemons (one to marinate and three between chicken strips)
- 4 Cloves – Fresh Garlic, minced
- 1/2 Teaspoon – Celery Seeds
- 1/4 Teaspoon – Ground Red Pepper
- 1/3 Cup – Extra Virgin Olive Oil
- 1/2 Teaspoon – Salt
- 1 Gallon Plastic Zippered Bag
- Wooden Skewers
Preparation
- Cut chicken breasts into strips across the grain. This will produce strips approximately 3″ long and 1/2″ thick
- Add the juice of ONE lemon and the minced garlic, celery seed and pepper to the plastic bag and dance to incorporate all of the ingredients.
- Refrigerate overnight
- The next day … Soak your wooden skewers in water to prevent burning them on the grill.
- Cut the remaining 3 lemons into thin strips after cutting the lemons into two spheres.
- Lace each chicken strip around a folded piece of lemon.
- Now add the salt
- Grill covered at 275 degrees, rotating once, until chicken is a very light golden brown.
- Serve with a summer salad and a side vegetable such as rice or corn on the cob, and enjoy.
Serves eight adults and a bunch of kids that will say “cluck cluck” for more.
