Skewered Lemon Chicken-Kabobs

Preparation for these delicious Skewered Lemon Chicken-Kabobs is easy, but a bit time consuming.  Preparation for marinating begins the day before.  The result is lean strips of chicken breasts bursting with flavor that your family will love.

Ingredients

  • 4 to 5  Pounds –  Fresh (never frozen) Boneless Skinless Chicken Breast
  • 4 Each –  Lemons (one to marinate and three between chicken strips)
  • 4 Cloves –  Fresh Garlic, minced
  • 1/2 Teaspoon –  Celery Seeds
  • 1/4 Teaspoon – Ground Red Pepper
  • 1/3 Cup – Extra Virgin Olive Oil
  • 1/2 Teaspoon – Salt
  • 1 Gallon Plastic Zippered Bag
  • Wooden Skewers

Preparation

  1. Cut chicken breasts into strips across the grain. This will produce strips approximately 3″ long and 1/2″ thick
  2. Add the juice of ONE lemon and the minced garlic, celery seed and pepper to the  plastic bag and dance to incorporate all of the ingredients.
  3. Refrigerate overnight
  4. The next day … Soak your wooden skewers in water to prevent burning them on the grill.
  5. Cut the remaining 3 lemons into thin strips after cutting the lemons into two spheres.
  6. Lace each chicken strip around a folded piece of lemon.
  7. Now add the salt
  8. Grill covered at 275 degrees, rotating once, until chicken is a very light golden brown.
  9. Serve with a summer salad and a side vegetable such as rice or corn on the cob, and enjoy.

Serves eight adults and a bunch of kids that will say “cluck cluck” for more.
