Three Sea Creatures in a Corn Field

This dinner is one of my Mother-in-Law’s “Top Five” favorite Sunday Dinners.  We call it Three Sea Creatures in a Corn Field because it is a mixture of seafood on CORN Pasta.  This seafood is complemented by the corn pasta in the same way Shrimp & Grits go together.

It is easy to prepare and will be enjoyed by all age segments of your family.  The young kids were initially apprehensive about the crab claws …  then completed to see who could eat the most!

Ingredients

  • 1.5 Pounds – Extra Large Shrimp With Tails, 26-30 shrimp / pound, fresh or frozen
  • 1 Pound -Fresh Mahi Fillets, sliced into 3/8″ strips
  • 1 Pound – Marinated Blue Crab Claws, chilled and ready to eat
  • 1 Pound – Dried Corn Pasta
  • 1.5 Teaspoons – Salt
  • 1/2 Teaspoons – Finely Ground Black Pepper
  • 1.5 Tablespoons – Extra Virgin Olive Oil
  • 4 Cloves – Fresh Garlic, Minced
  • 1 Each – Medium Onion, Finely Diced
  • 3 Each – Celery Sticks, Finely Diced
  • 2 Each –  Small Roma Tomatoes, Finely Diced
  • 1 to 2 Sticks – Butter, adjust to your liking
  • 2 Each Green Onions (Scallions), Thinly Sliced

Preparation

  1. Begin by sauteing the onions, celery and garlic in the extra virgin olive oil, salt and pepper over medium heat in a large skillet.
  2. As the onions and celery begin to become clear, boil the water for the pasta.
  3. Add the butter to the skillet and when it begins melt ant the pasta water begins to bubble, add the pasta to the boiling water. It will only take approximately 8 minutes to cook.
  4. At the same time, add the shrimp and mahi to the onion, garlic, celery, butter prepared skillet.
  5. Cook for a few minutes on each side until the shrimp turn a shrimp rich color and the mahi become white and flaky.  This will take approximately 5 minutes on the first side.
  6. Flip the shrimp & mahi and cook for an additional 3 to 5 minutes.
  7. After your initial skillet of delicious shrimp and/or mahi is cooked, repeat the skillet cooking until everyone is served.
  8. Top with the goodness of the onion, garlic, celery, tomato and butter mixture.
  9. Serve with a side of chilled, marinated blue crab claws and top with thinly sliced scallion.

Feeds 8 adults and a bunch of kids trained on McD’s Happy Meals.
