Coriander Chicken on The Grill

When the weather turn nice, we turn to the grill.  Steak is admittedly our favorite, but grilled chicken is a close second.  This chicken is seasoned with a very mild and unique spice, Coriander.  Coriander is native to southern Europe and North Africa to southwestern Asia.

Ingredients

5 Pounds – Fresh Chicken Breasts, approximately seven large breasts.  Select fresh, not frozen.

1 Tablespoon – Extra Virgin Olive Oil

1 Tablespoon – Ground Coriander Spice

1 Tablespoon – Salt

1 Tablespoon – Black Pepper

Preparation

  1. Combine all ingredients in a mixing bowl or Heavy duty plastic bag and coat Chicken Breasts with the seasoning and Olive Oil mixture.  Marinate in refrigerator  for at least 1 hour.
  2. Cook in covered grill for 25 minutes at 300 degrees.
  3. Turn over and cook an additional 25 minutes, for a total cook time of 50 minutes.
  4. Slice into 1/2″ thick “steaks” and serve.

Serves 8 adults and a bunch of grandkids.
